Cooking with Less kWh – Roasted Chicken

roasted chickenRoasted chicken not only is great with vegetables for dinner, but the leftovers can be turned into delicious recipes in just minutes. However heating up the oven this time of year causes your air conditioner to work harder. Here’s where a crock-pot comes to the rescue again!

I roasted 5 leg quarters in my crockpot. The capacity of your crockpot will determine how many you roast at a time.

Start with a crock-pot liner, and then add seasoned chicken. Use any seasoning that you and your family enjoy. I stacked mine in two layers in the crock-pot. Let it cook on low for 7 to 8 hours or on high 3 to 4 hours. The exact cooking time will depend on the amount of chicken in your crock-pot.

Once the chicken is done, you will have beautiful roasted chicken and drippings. Don’t throw the drippings out! The fat can be skimmed from the drippings after it cools, and you can refrigerate or freeze it and use it in place of chicken stock in recipes.
